Silken Tofu Mousse
Serves 4-6

1 package firm SILKEN tofu
1 cup fresh fruit or fruit jam
1 teaspoon. Kaffir lime leaf, chopped very fine (optional)
1 teaspoon lemon extract
1 tablespoon sugar (optional)

Berry Topping Sauce
1/2 cup frozen berries (strawberry, raspberry, blueberry)
1 tablespoon sugar (optional)

In this healthful, decadent mousse, made with silken tofu, you can use any fresh fruit or fruit jam that you want. Break the silken tofu in to pieces and place in a food processor or blender. Add the fresh fruit or jam, the kaffir lime leaf and the lemon extract. Blend until very smooth. Taste and add sugar if needed. Pour the mousse into individual serving glasses or small bowls. Refrigerate for 3 or more hours. You can make the mousse the night before you want to serve it. To make the berry sauce, place the thawed berries in the blender and blend until smooth. Taste and add the sugar if desired. Pour into a container and keep refrigerated.

Before serving, pour 3 tablespoons of the berry sauce over each individual mousse. A nice way to garnish is to place a ginger snap cookie and a sprig of mint in the middle and serve.
