Earlier this year, I tried some meatless samples that were being handed out by Tasty and Meatless and Down to Earth Natural Foods. I was pleasantly surprised how tasty everything was. For example, they had Mock Chicken Tofu. Because there was a strong chicken flavor it really seemed that there was actually chicken in the dish. I thought, “If the dishes taste like this then I think I can do without meat!”

To prepare for the gradual transition, I downloaded some recipes from the Tasty and Meatless website to start with. I also bought some frozen meatless entrees and soup cups from Down to Earth that I could bring to work. I included my husband and daughter in this process. Whatever new dish that I bought or new recipe that I made was divided into thirds, so no one would be overwhelmed by having to eat something they were not used to. We then rated every new dish as OK, GOOD, VERY GOOD, or EXCELLENT. We kept a record of the recipes and prepared food that would be something that all of us would like to eat again.

I started the Meat Out on Monday, March 15th, 2004, and to date I have not had any beef, pork, chicken, fish, or eggs, but have continued to consume dairy. I feel proud and healthy for making this decision and look forward to learning more and practicing a meatless lifestyle.
