
Meatless Chicken Salad
1 cup dehydrated soy protein (Chicken Strips style)
1 celery, chopped
1/2 carrot, chopped
1 clove garlic
1 slice fresh ginger
1/4 cup Nayonaise (or to taste)
salt and pepper to taste
Hydrate the meatless chicken strips according to the package directions (1 cup hot water to 1 cup dehydrated soy protein, let sit for 10 minutes or until water is absorbed). Then, saute the hydrated soy protein with the garlic and ginger for a few minutes to add flavor to the soy protein. Let it cool and then slice into chunks. Mix all the rest of the ingredients together in a bowl. Eat as a filling in a tortilla or as a sandwich.
