Baked Tofu

1 lb. firm tofu
1/4 cup. Bragg Aminos or soy sauce
vegetable oil or cooking spray

First press the tofu to remove excess water. Remove tofu from its container. Rinse container and place upside down in a shallow baking dish to catch the water. Place tofu on top of its container and cover with a folded paper towel. Place a flat plate or small pan on top and weigh down with additional plates or a couple of cans. Press for at least 1 hr. in order to get a firm consistency for baking the tofu. If you want to do this overnight, cover with plastic wrap and place in refrigerator.

To bake the tofu, preheat oven to 400 f. Lightly oil or spray a baking sheet. Cut tofu in cubes or squares and place on baking sheet. Bake for 20 minutes. Remove from oven and sprinkle Bragg Aminos or soy sauce on tofu. Return to oven and bake an additional 5 minutes. Cool and use right away or store in air tight container for up to a week in refrigerator.

Use baked tofu in stir fries, on sandwiches, in salads, or eat as a snack. Get creative and try baking tofu with garlic, herbs, and marinades, like a bottled teriyaki sauce.
